How did you get involved with City Harvest?
I've admired this organization for years, and the first time they invited me to participate in an event I was thrilled. That was 10 years ago and I'm still involved.

Why is hunger an important issue for you?
I don't think people should suffer for lack of food, and people in the restaurant business like us have an obligation to help others.

How has your involvement with City Harvest affected your outlook on food and/or hunger in New York City?
It's so hard to see how many people suffer from hunger, not only in New York City but all over the world. I see food differently now, and I appreciate every meal I eat each day.

What inspired you to become a chef?
Watching the passion my grandfather had when he cooked. I just knew there was something special about it.

What is your favorite part of operating a restaurant in New York City?
Besides the cooking, I love talking to the people who come in to my restaurants, and just having fun in general.

What is your favorite hidden gem of a restaurant in New York City?
Stamatis, a Greek restaurant in Astoria.

What is your favorite type of food to eat?
Japanese, Mexican, French, Italian, Thai, Vietnamese, Indian, Chinese, Peruvian, Colombian, Argentinean, Cuban, Sri Lankan, American

What is your favorite type of food to make?
Comfort food for the most part, but I like to take ingredients from different regions and incorporate those in my dishes.

What can you not live without in your kitchen?
Vitamix blender

What is your favorite junk food?
Nachos, chicken wings

What is in your refrigerator?
Coconut water, cheeses, white wine, corona, limes, saucisson, Greek yogurt, chipotles, pickled jalapeños, tortillas, lentil soup, hummus, champagne, hot sauces, turkey bacon

What was the last best meal that you had?
Marea, A Voce, and during the holidays at my friend's, Chef Scott Bieber

With all you have done in 2010, what else is coming up in 2011?
I have a New Toloache coming soon on the Upper East Side, and some other projects as well.
